Shiitake takes its name from "shii," the oak-like logs it's traditionally grown on in Japan — a cultivation method that's part of why it carries a deeper, more complex flavour than mushrooms grown on straw or compost. That depth is why professional kitchens reach for shiitake specifically when they want an umami backbone rather than just mushroom flavour: simmer a handful of these caps in stock for twenty minutes and you'll notice the broth thickens in character well before it thickens in texture.

We dry ours with enough sun exposure to matter — dried, sun-exposed shiitake is known to develop meaningfully more vitamin D2 than mushrooms dried purely by machine, one of the few reliable plant-side sources of that vitamin. Rehydrate the caps for broths, ramen and gravies, and don't discard the stems; they're edible too, just fibrous, so we'd suggest dicing them into the stock pot rather than serving them whole on the plate.

A quick honest note on species pricing: shiitake costs more than button or oyster in this range, and that's simply the input cost of a slower-growing, log-cultivated mushroom with a more concentrated flavour compound profile, not a premium markup for the sake of it.
