Oyster mushrooms get their name from their shell-like, fan-shaped cap, not from any resemblance in taste — and they're one of the easiest mushrooms to grow at scale, which is part of why they're a starter crop for so many small Indian growers who cultivate them on straw and farm waste in stacked bags. That low-input growing method keeps supply steady and pricing sane, which shows up directly in what a 100g pack of these costs compared to a premium species.
Our dried oyster slices are sun-dried whole, so what you're rehydrating is the actual cap and stem, not a reconstituted fragment. Ten minutes in warm water brings them back to a texture close to fresh — soak, squeeze out the excess water, and they go straight into a kadai for curries, into pulao just before the rice steams, or into a stir-fry where their slightly meaty bite holds up better than button mushroom against high heat.
Oyster mushroom carries a genuinely useful fibre count for a culinary mushroom — noticeably higher than button on a like-for-like basis — alongside a decent potassium contribution. Like most mushrooms it's mostly water when fresh, which is exactly why drying it down concentrates that fibre and mineral content into a pack you can store on a shelf for months instead of using within days.
