This is the cookie to start with if you're new to the range and want to know what mushroom powder actually tastes like without a millet flour or fruit filling changing the picture — it's a straightforward maida butter cookie, the shortbread-style base most people grew up on, with mushroom powder folded directly into the dough rather than any flavouring added on top.
That distinction matters more than it sounds like it should. A fair amount of the packaged snack industry uses mushroom flavouring — a compound designed to mimic an earthy or umami taste — instead of the actual dried, milled ingredient, because flavouring is cheaper and easier to dose consistently. We use real milled mushroom powder here specifically because a flavoured cookie carries none of the fibre or protein of an actual mushroom, and the entire premise of putting mushroom powder in a cookie only holds up if there's real mushroom in it.
