The goal with this one was to get as close as possible to a classic butter cookie's snap and crumb using jowar flour instead of maida, and jowar turns out to be a good match for that texture — it bakes up short and crumbly rather than dense or gritty, which is the usual complaint about millet-flour baking. If you've been disappointed by gluten-free cookies that taste like compromise, this is built specifically to not be that.
Mushroom powder here is doing quieter work than in our chocolate cookies — there's no cocoa to balance against, so what you actually taste is a faint savoury undercurrent beneath the butter flavour, more umami than earthy. It's a subtle enough edge that people who don't know what's in it usually can't immediately name it; they just notice the cookie tastes a little more complex than a plain butter biscuit.
Jowar is naturally gluten-free and has a milder flavour than ragi or bajra, which is why we chose it specifically for a butter-cookie formulation rather than a more assertively flavoured base — a stronger millet would have fought the butter notes instead of getting out of the way of them. It's a straightforward, everyday cookie rather than a health-forward one, positioned closer to our classic maida cookie in eating experience than to our higher-fibre options.
