Shiitake Mushroom Stir-Fry

Ingredients
- 200g fresh shiitake mushroom, sliced (or 20g dried shiitake, rehydrated and sliced, soaking liquid reserved)
- 2 tbsp oil
- 3 cloves garlic, thinly sliced
- 1 inch ginger, julienned
- 2 spring onions, sliced, whites and greens separated
- 1.5 tbsp soy sauce
- 1 tsp sesame oil
- 1/2 tsp sugar
- White pepper or black pepper, to taste
- Toasted sesame seeds, to finish
Instructions
- Heat oil in a wok or wide pan over high heat until just smoking.
- Add garlic, ginger and the white parts of the spring onion. Stir-fry for 20–30 seconds until fragrant. Don't let the garlic brown.
- Add the sliced shiitake and spread it in a single layer. Let it sit undisturbed for 1–2 minutes to pick up some char before tossing.
- Stir-fry on high heat for 4–5 minutes total, until the mushroom is tender and lightly browned at the edges.
- Add soy sauce, sesame oil, sugar and a splash of the reserved shiitake soaking liquid (if using dried) or plain water. Toss for 1 minute to glaze.
- Season with pepper, garnish with spring onion greens and sesame seeds, and serve immediately.
Tips
- High heat and a hot pan matter more than seasoning here: shiitake needs to sear, not steam, to develop its umami properly.
- Save the stem: dice it fine and toss it in with the caps rather than discarding it; it has the same flavour, just a firmer texture.
- If using dried shiitake, don't discard the soaking liquid: it's concentrated shiitake stock and makes the glaze noticeably deeper in flavour.
