Lion's Mane Mushroom "Steak"

Ingredients

  • 1 whole lion's mane mushroom (about 250–300g), sliced into 1-inch thick "steaks"
  • 3 tbsp butter or oil
  • 3 cloves garlic, lightly crushed
  • 1 sprig thyme or rosemary
  • Salt and pepper to taste
  • Lemon wedge, to serve

Instructions

  1. Pat each lion's mane slice completely dry with a paper towel: this matters more here than with almost any other mushroom, given how much moisture the spines hold.
  2. Season both sides lightly with salt and pepper.
  3. Heat butter or oil in a heavy pan over medium-high heat until foaming.
  4. Add the slices in a single layer without crowding, along with garlic and thyme.
  5. Sear for 3–4 minutes per side, pressing gently with a spatula occasionally, until deeply golden-brown and crisp at the edges.
  6. Baste with the pan butter for the last minute of cooking.
  7. Rest for 1–2 minutes, then serve with a squeeze of lemon.

Tips

  • Lion's mane's texture is genuinely closer to crab or lobster than to a typical cap-and-stem mushroom once seared: don't over-flip it, let each side develop real colour before turning.
  • If your lion's mane is watery straight out of the fridge, sear it once first without seasoning to drive off excess moisture, then wipe the pan and re-sear with butter and seasoning for the final crust.
  • This is one of the few mushrooms where the fresh, cooked form is the point: most of the retail lion's mane you'll find is dried or powdered for wellness use, but the fresh fruiting body is genuinely good to cook with when you can get it.
