Gucchi (Morel) Pulao

Ingredients
- 15–20 dried gucchi (morel) mushroom, soaked in warm water for 30 minutes, then rinsed thoroughly to remove grit
- 1.5 cups basmati rice, soaked 20 minutes and drained
- 3 tbsp ghee
- 1 bay leaf, 4 cloves, 2 green cardamom, 1 inch cinnamon
- 1 onion, thinly sliced
- 1/2 cup mixed nuts (cashews, almonds), lightly toasted
- 2.5 cups water or light stock
- Salt to taste
- A few saffron strands soaked in 2 tbsp warm milk (optional)
Instructions
- Halve or quarter the soaked gucchi lengthwise and rinse again carefully: morels are hollow and trap grit inside, so a thorough rinse is essential.
- Heat ghee in a heavy-bottomed pot. Add the whole spices and let them sizzle for 20–30 seconds.
- Add sliced onion and sauté until golden brown, about 6–7 minutes.
- Add the cleaned gucchi and sauté for 3–4 minutes until they've softened slightly and taken on the ghee's flavour.
- Add the drained rice and gently toss for 1–2 minutes to coat each grain without breaking it.
- Add water or stock and salt. Bring to a boil, then reduce to the lowest heat, cover tightly, and cook for 15–18 minutes until the rice is tender and the water is absorbed.
- Drizzle the saffron milk over the top if using, then let it rest, covered, for 5 minutes before fluffing gently with a fork.
- Top with toasted nuts and serve.
Tips
- Never skip the rinse-after-soaking step: gucchi's honeycomb cap holds sand and grit that a single soak alone won't remove.
- Because gucchi is entirely wild-foraged and seasonal, this dish is worth treating as a special-occasion recipe rather than a weeknight staple: its price reflects genuine scarcity, not markup.
- If gucchi isn't available, dried morel from a specialty grocer is the same mushroom under its international name and works identically here.
